YIKES!!!!!!!!

So, a week ago I made a commitment. A BIG commitment. Something that royally scares the pants right off of me. BUT as of right now, I’m just going to continue with eating the weird/good for me stuff and plow through the plan I have. I’ll tell you all what it is later. I’m bad at keeping secrets but I need to know that I CAN do this before I tell everyone. Patience grasshoppa………….it will come in time.(written 7/21/11)

Ok, so the background of these previous posts is that I made a commitment to do a Triathlon. There, I said it and I almost just threw up in my mouth when writing that.  I just read Caitlin’s recap of a Tri that she and Ashley( read that one too, but oddly it made me thrilled to do one) did.  I seriously got physically ill when reading Caitlin’s recap.  Its not that I want to back out, its that I want to accomplish this extremely big task I set for myself.  I know I’m in this thing, I’ve started training, I know I CAN do this mentally and physically. Now its just making sure I have the strength and stamina to do it come April 2012.   Again, I’m trying to keep my breakfast down.

I haven’t gotten nervous until I read Caitlin’s recap.  I think things just got real.  I will be doing(along with a wonderful friend who introduced the idea of a triathlon to me)  the Try Charleston Sprint Triathlon on April 28, 2012.  I will do it.  I NEED to do it.  I HAVE to do it.  Why? because I need to live out this saying: “If you dreams don’t scare you, they’re not big enough.”  That’s going to be/has been my mantra for my training.  I have a 4 month training plan that I’m doubling, and then the last month will be maintenance and tapering down.  I have the plan, I’m working the plan.

SO, a list of things I have:

For biking: new bike, so flattering bike shorts, helmet, and the knowledge that I rode 4 miles OVER the distance I have to do for the tri. Needs: possibly a different bike seat, ow.

For running: love of running, fear of injuring myself, lack of self control when I run because I know I can just go out and run 4 miles if I want to but I will probably injure myself so I have to work up to it. Needs: new running shoes and restraint.

For Swimming:  lovely Speedo suit, goggles, and cap.  Needs: to make sure I can swim 500 meters(preferably more)  and a gym membership so I can swim in the winter.  I’m not a natural born swimmer but I can swim, so I would consider this my weakest sport.  All help is welcome.

So, I’m asking for prayers, support, words of encouragement, questions on how training is going, etc. because I realized as I was reading Caitlin’s post that I can’t keep this inside any longer.  I can’t do this alone, I’m not doing this alone.  I wanted to know that I could do it before announcing it to the world nonchalantly, so the time is now.  (written 8/9/11)

I. Drink. ALOT.

NO, this absolutely does not mean I’m an alcoholic.  Put down the phone and save that number for AA for someone else.  I’m talking about smoothies, juice, and water.  I’ve always drank a lot, no matter what it is.  I drink close to 60-80 ounces of water a day, easily.  That’s not counting the morning coffee and/or other liquids consumed in a day.  I usually always have a sip-worthy drink in my hand at all times.  As I stated in my previous post, my kidneys have been acting a bit funny so after the Wheatgrass wonderfulness, I decided that I needed to start adding a daily juice to my diet. I get a bi-weekly produce bin thanks to Prudent Produce (if you’re in the Des Moines area, I HIGHLY recommend you call Angie and get set up.  It is so worth the money and she’s a peach to deal with.) and I had some apples and carrots that were just begging to be juiced.  I also had stopped by  Campbell’s Nutrition (my FAVE place to get my many weird items) and picked up some beets.  I have an obsession with beets.  Their color is intoxicating and it makes me shiver with delight when I eat/drink that radiant color!!!!  I also had some fresh ginger on hand, so that was the mix I juiced when I got home on night. The first one I think I got a bit too much ginger in it, it burned a bit.  Not a bad burn, just a really strong ginger flavor that masked the other ones.  Still good, still got guzzled.  The next morning I wasn’t feeling a smoothie, so I juiced!

Doesn’t it look like blood in there?  All vampire jokes aside……..this was delicious.  AND it filled me up until way after 1pm.  I think I also added a kiwi to this.  Either way, it was phenomenal.

Sidenote: I have been trying to find something that will fill me up and leave me not hungry for the entire morning until lunchtime, oddly enough, this is the first thing to hold me over for that long.

Another one of my juice concoctions: Orange/Carrot(my fave color is orange, so this juice is near and dear to my heart). It tastes like an Orange Julius I used to have at the mall with my grandma and grandpa when I was little.

 

Another one of my sip-able obsessions: smoothies.   Whether they are fruity, coffee-y, chocolatey, etc I am obsessed with making every single type.  I have a friend.  She might remain nameless, for now.  We are kindred spirits.  We both have obsessions with protein powder. If I’m going to drink it, it might as well be healthy, right?  Well, said friend turned me onto this website and things have never been the same.  So. Many. Flavors. to choose from.  We ordered eight flavors.  We split all eight between the two of us and had one unforgettable night testing/splitting/licking counter tops(don’t you dare judge me)/laughing/talking about all of the different flavors we had purchased.  So, the rundown of what we purchased:

Pineapple- no need to say more, I have a slight pineapple obsession and I’m almost out of this flavor.

Key Lime Pie- it needs a lot of sour juice to go with it because its a bit too sweet for me but delish nonetheless.

Peanut Butter- eh, I use it when I don’t want to taste the protein flavor

Peach- Holy wow, I made a peach cobbler flavor when I mixed this and Cake Batter.

Cake Batter- I licked every inch of that counter to make sure none went to waste

Watermelon- an unexpected surprise.  It is being put to good use this summer

Coconut- the perfect food, in all shapes and sizes. I’ll probably get it unsweetened next time, but still so good.

Cookies and Cream- ah, the flavor that is at the root of my newest smoothie obsession.  I usually make a protein mix along the lines of this recipe(I’ve tried the mixes that she modeled the recipe after and the flavors don’t come close to the homemade kind. Not to mention the boatloads of cash it saves me  AND she did all of the nutritional work and recipe formulation for you, how awesome is that???)  And I had made a chocolate mix with the C&C flavor but hadn’t used it because I’m usually craving something fruity.

Well after a broken french press coffee pot, I started cold brewing my coffee. I was already going to ice it down anyway, but then I thought about freezing some of my cold press coffee. Not a new thought, but sometimes the coffee gets funky if it sits in the fridge too long so what the heck.  THEN the wheels started turning.

Race out the door, to make sure your’e not late to work when you only drive a mile(again, don’t judge me). BUT don’t forget to savor this chocolately wonderfulness. This usually holds me to like 10:30ish unless I drink it really slow or if I have coffee with almond milk to help tide me over.  BUT its so good and good for you!!! WHEATGRASS, the new love in my life!!!

After a sleepless night- which are few and far between for me because I sleep like the dead- and a very early decision to get up and go to work early to finish off two presentations and get a head start on Monday reports, a quad shot latte from Starbucks, and getting into the office around 6:15am I decided my body needed some TLC when it came to lunch. I’ve been hearing about Fresh Cafe Market(sorry their website is down right now) that is right down the road from my office, I had my sights set on wheatgrass. I’ve never had it but I have always wanted to try it and today seemed like the right time. I also didn’t drink a whole lot of water yesterday and my kidneys are screaming like I bathed them in tequila, gin and vodka in a quick 4 hour time period(yes it has happened, no it hasn’t happened in a while). So, off to find FRESH. I ordered their wheatgrass lemonade and the fallafel wrap. OHHHHHH MYYYYYYYYYYY!!!!!!!!!!! I will now be forwarding my grocery budget to them. Not only was the fallafel wrap so fresh with olives, cucumbers, greens, hummus, and fallafels but the lemonade. Holy wow, people. I savored every last bit of it. It tasted like an earthier less sweet version of a granny smith apple. Pure refreshment. I can’t wait to get more!!!! My coffee addiction might turn into a wheatgrass addiction………………………..or I’ll just have two addictions. YES, that seems like a better fit!!! Ok, well go out there and drink some grass!!!!!!! And you’ll thank me later!

I am going to try and be better at taking pictures of things that I make but for now, here are a couple pictures that I’ve taken with my phone(please excuse the Blackberry, pictures just aren’t it’s forte).

Raw Vegan Mallomars from Pure 2 Raw

Raw MallomarsYou should get the recipe off of the website i linked to, but I did make some changes.  I used pepitas in the crust and added cacao nibs too.  AND I kind of ruined the chocolate sauce I made for the top, so that’s still warm melted chocolate chips.  You can’t will them all, people.  They were delicious, finger-licking good.  I gave them to a friend, who hoarded them.  I don’t blame her.  OH, they were also mini’s, which were so cute.

Going clockwise from the big container in the top left, we have NINE raw springrolls containing a slaw mix and simple dressing, cucumbers and beets. Next we have raw baby peppers and cherry tomatoes to dip in (next) wasabi hummus, and then fresh strawberries and finally easy peanut sauce( Recipe Found Here) for spring roll dip-age.  I actually ended up dipping the spring rolls into the Wasabi hummus because it make them taste like sushi rolls- minus the throat burning and nose clearing pure wasabi effect.  All of this was Meredith and/or mother nature made.  No cooking, just mixing of ingredients.  Gotta love easy.  I took all of this and left it in the fridge at work and it lasted for Monday-Wednesday lunches.

BEST BREAKFAST EVER!!!!!!!!!!!!!!!!!(I’m so not kidding)

I bought a two pound package of fresh blueberries from Costco and after using them in everything from oatmeal to salads, I had to use the end up by making some Saturday brunch muffins. (brunch, more like late lunch.  No Judgement, it was Saturday.)  AND I happen to also make a stellar chai spice latte, sweetened with GRADE B(the only kind you’ll ever need to know about) maple syrup and creamed up with some delicious almond milk.  Stellar.  No other words necessary.  And then I went ahead and broke my french press.  It’s ok(kind of) because this breakfast-ahem, lunch snack- was so worth it!!!  I used Mama Pea’s recipe and HOLY COW, I’ve made them four times since I first sank my teeth into these muffins(which I used Jumbo cups and they kinda ran over.  Let’s not kid ourselves and think that you’ll only have one regular sized muffin, because you won’t.) After the first batch I ditched the whole muffin thing and just made a freaking cake.  AND I doubled the topping, and used Sucanat instead of sugar.  I also made a gluten free version using Chickpea flour.  Not bad, not great, but they’re for a very special friend who can’t handle gluten.  the GF version needs a bit of work, but she’s still getttin a big ol’ slab of that cake and she’s gonna like it too!!!

It was actually a tofu scramble I made as a ketchup delivery system.  I like my ketchup.  This turned out great though too, just don’t forget the ketchup.  It had rainbow chard(insert immature giggle here, because I think saying the word “chard” is funny) and turmeric and leeks in it.  It was fantastic and a wonderful easy dinner.  No recipe, this was a Meredith original.  Do you see the pan it was made in?  Yeah, she’s my first Le Creuset pan.  It’s actually the lid to the pot I bought, two in one, gotta love it.  Her name is Rosie, in honor of my beloved old car.  I needed some red flash in my life and Rosie fills that void.  LOVE HER.  Have a great day folks, I’ll be back later with some more recent eats and a few “weird” ingredients!!!  Until next time Foodies!!!

My First REAL Post

SO unless you know me personally, or have read my “ME” section you wouldn’t know that this blog is going to be a vegan cooking blog, right?  Well, its going to be.  I’ve continuously moving towards an exclusively plant based diet.  There are some random ingredients of prepared food that I overlook but for the most part I eat 99% plant based foods.  THIS, would be the weird stuff and honestly 6 months ago, all of this was weird to me too besides tofu and soy milk.  My family and co-workers all give me weird looks when I cook or sit down to eat lunch in the work kitchen.  I think that eating a plant based diet is the right thing for me, right now. I feel better, I look better and I feel good about what goes into my body.  The other day I made fermented cheese from hazelnuts and cashews, and at first I was hesitant but then I realized that I was eating nuts with herbs and seasonings in it and really anyone who has eaten bar nuts has eaten the ingredients I was too.  SO, I’m going to try and document(with pictures, something I failed at on my other blog) and share with you all.  If you have any questions, let me know I love to talk and I’d be glad to answer questions.  Sorry, no pics right now.  I’ll keep working on that:)
